ReviewX calculates and stores each review’s rating against the criteria that existed at the moment it was submitted. Deleting a criterion later doesn’t retroactively change past reviews — the rating data already collected for that criterion stays attached to those individual reviews and continues to display for them.

What changes is only forward-looking: new reviews submitted after deletion won’t include that criterion, and it drops out of your criteria graph going forward.
